Food for Runners: What this runner likes to eat

I am not a nutritionist but I pretend to be one in person and sometimes on this blog. I love food. I have been eating since well I was born. I do not follow any particular diet like Paleo or the Zone. I simply eat a vegetarian diet (No beef, pork or chicken). I don’t eat healthy all the time. I wish I could but I am human. Don’t think you have to do a complete diet overhaul when you start running. Just add in healthier foods to your day.

Tonight I stopped by the supermarket to grab a few essentials for my refrigerator. Lately I am in love with Butternut Squash. I like to buy things from the scratch but I cannot handle peeling and chopping another squash. I usually like to stock my shelves and refrigerator with the basics (see below).  I like to mix things up every week. I try to buy something new like a different veg or fruit. Keeps things interesting.

Basics in my kitchen:

Fruit

  • Bananas
  • Apples
  • Avocado
  • Seasonal 

Veg

  • Carrots
  • Celery
  • Sweet Potato 
  • Cabbage
  • Tomatoes
  • Seasonal
  • Spinach
  • Kale

Beans

  • Chickpeas
  • Black beans

Other

  • Chocolate milk
  • Green & Black tea
  • Quinoa 
  • Brown rice
  • Gluten-free tortilla chips
  • Tofu

I love my Vitamix for so many reasons. I no longer waste as much food. I can whip just about any kind of soup with any wilting vegetable and it tastes AWESOME. Save up your pennies and buy one. IT IS SO WORTH IT.
