Food prep day

Usually I take a few good hours on Sunday to prep for the week. I try to follow the golden rule – if there’s healthy food on hand, you will eat healthy. Since today is a holiday, I let the prepping slide until today. No excuses because I had much to rinse, chop, separate and refrigerate.

                  
 

I went to the market on Saturday and visited a friend with a garden on Sunday. Let’s just say my fridge was bursting with garden goodness. I rinsed and chopped my veggies before separating them in containers. This way I can grab some for a salad, stir fry or whatever for lunches during the week. I also whipped up some hummus and salsa.

                               

I needed a break from all my slicing and dicing. I met Sona & Brent for coffee downtown. We didn’t have much choice as everything was closed. We wandered around looking in the windows of the closed businesses before stopping at City Hall park to smell the flowers.

                                                  
I bought a huge bag of new baby potatoes at the public market. I love roasted garlic potatoes. I haven’t had much luck roasting them. But this time they turned out great. Great way to cap off my weekend!
