Vegan Paella

I can count on one hand how many times I have used my Crock Pot. Don’t get me wrong, I want to use it. I’m all for saving time but I haven’t had much luck in finding veg-friendly recipes. I lucked out on Friday while checking the bargain items at Chapters. I scooped up a colourful veg Crock Pot cookbook for only $12.
 

 
 
Now if you’re anything like me, you love flipping through the pages and LOOKING at the recipes. I have a good collection of books that I have only cracked the spine. Sometimes I get the urge to whip up a dish but I usually come to a full stop because I am short 2 or 3 ingredients or I don’t have the time. 
 
 
 
One of my goals in 2014 is to try new dishes. I flipped through the book & found this easy recipe for paella. (Plus I love saying the Spanish word for pan – “paella.”) I had to do my big shop on Saturday so I picked up the ingredients. (Sorry I was a little messy while tasting as my book shows.)
 

 

 
The plan was to make the paella while watching the Olympic gold medal game on Sunday morning. The night before I sorted everything in the fridge and prepared the ingredients. The cooking time was 4 hours on low. This would be great timing because it would be done in time for lunch! 
 
 
While it looks like mush, I swear my veg paella is very TASTY. I think I added more water than the recipe called for. Oops.  I like spice and this could have used a lot more. I stuck to the recipe which called for only 1/8 ground red pepper. Surprisingly, this recipe didn’t call for saffron which is used in traditional paella dishes. The recipe says there’s enough for six servings (more like 10). I’ll likely freeze some so I don’t get tired of eating it all week! 
 
I’m looking forward to trying another meatless slow cooker recipe next week! I may try another attempt of making a curry.

    1. Nice & filling too! Just too much for one person! I must look into a smaller crock pot!

  2. We love using our slow cooker at home. That looks like a very tasty dish! The meal that we make the most in our slow cooker is chilli, both the meat and vegetarian versions.
