Zucchini: The Awesome Summer Squash

I have my first zucchini of the season! 
Just when I had all but given up on my garden … stuff grew. 
It’s been raining like crazy lately which obviously did the trick for my tired garden. My Swiss chard, peas, lettuce, kale and carrots are growing like crazy. I will eat fresh for weeks. 
My zucchini is small compared to Jack’s take. His beauties were about three times the size. I was just so excited to find one growing under the leaves. I will let the others grow a little bigger. Jack baked zucchini bag. 
I made … zucchini chips! This time there was no trips to the ER. All my fingers are intact. I finally mastered my mandolin slicer.  I rocked the blades. I had bought zucchini from the grocery store. My zucchini is still in the fridge. I want to save it for something special. Is that weird?

I made a batch of cayenne pepper chips and salt and vinegar. Both batches turned out great! The only problem with zucchini is that it shrinks so much when it dehydrates. Still the chips are so good, almost too good to share.

I brought some into the office (and I put some aside for Trina).

They were a hit! My co-workers are slowly getting used to my “try this” and “try that.” I don’t have anyone to cook for so I love sharing my creations at the office.
