In My Veg Kitchen: Korean sushi rolls

Sushi.

Vegan sushi, that is. 

Obsessed is what I’m feeling lately about vegan sushi rolls or gimbap. Check out my Instagram feed if you want a visual. I can’t get enough and therefore all my friends must make them as well. Last week I think I had them four days in a row. I brought them to work and to Sona and Brent’s for potlucks and most recently, I showed them my quick and dirty method to whip up a batch. 

And just yesterday Rachel tried her hand some too. I tell you – it’s trending.

In Korea, the rolls are called  Korean sushi (gimbap) with rice (bap) and gim (seaweed). You could buy gimbap at a corner shop for a $1. People ate them for breakfast and on picnics. Here in Canada, it’s so expensive. Also the kind that you pick up at the grocery store is usually not fresh. I find the rice tends to harden if it’s been in the fridge too long.

Once upon a time, Bruce showed me how to make them in Ottawa. It has been such a long time that I had to re-learn how to make them. But once I got the hang of them, I was good to go. I watched a few YouTube videos to ensure I was on the right path. I don’t even use a bamboo mat anymore.

Making sushi is very easy if you are organized. My favourite combination involves avocado, spinach, sprouts and cucumber. The above photo was taken at a restaurant in St. Albert. Notice the bean curd (greenish) rolls. I was at another sushi place in Langley and they offered the same on the menu. It’s pretty tasty, and good for those people who do not like seaweed. (Not me. I can’t get enough of seaweed.) I prefer the nori. In fact I eat the half-sheets as snacks. (Told you I love seaweed). 

Tips

  • Be organized – prep your veggies while the rice is cooking
  • Set up a station – rice, water for dipping hands, nori, veggies
  • Wet your knife before cutting the rolls 

Are you craving sushi now? I know I am but tonight I am having sweet potato fries for dinner. Speaking of sweet potatoes, they taste amazing in sushi rolls.
